SMV: Sake Master Value. This number shows the taste of sake that bigger number is dry and smaller number include(-) mild and sweet.

| Sake made using white rice which has been milled so that 60% or less
of the grain remains. It also contains rice koji and water, and many contain
all of these ingredients plus brewing alcohol. It is characterized by a fruity,
somewhaat floral bouquet and clear, crisp flavour. If the rice is polished down
to 50% or less, the sake is called Dai-Ginjyou. |

One More Japanese Alcohol Sho-Chu

| Sho-Chu should not be confused with sake, brewed rice wine. Its taste is usually far less fruity and
depends strongly on the nature of the starach used in the brewing process. Its flavour is often described
as "nutty" or "earthy". |
It is generally distilled from a fermented liquid similar to molasses / repeated distillation forms
ethylalcohol of high purity which is typically odourless and has a taste of little distinction. Water is then
added and the precise nature of the water has subtle effects on the taste and palatability of the sho-chu.

Potato Sho-Chu uses sweet potato, widely cultivated southern kyushu since the edo period, as its base ingredient.
Originally it was almost exclusively produced in Kagoshima and Miyazaki prefectures, but nowadays is made across
Japan using locally-grown sweet potatoes. It tends to have a strong taste and a distinctive smell,
sharply dividing into those who do and dont like it. More recently producers have made varieties whose aroma is
somewhat suppressed.

Barley Sho-Chu is generally less distinctive than rice sho-chu and easy to drink.
However if cask-aged the taste can be quite sharp and strong reminiscent of single-malt whisky.
|

Sho-Chu is drunk in many ways according to season or personal taste.
